1 can black beans, rinsed
1 can carrots, rinsed
1 medium zucchini, diced
1 diced onion
1 can diced tomatoes, drained
Few tbsp. dice jalapeno peppers
1/4 bunch cilantro, chopped
2 green onions, finely chopped
Goodly measure chopped garlic
Lots of splashes of Tabasco
Salt and black pepper
Dusting of chili powder
Couple good spashes of white wine vinegar

Mix all up in bowl and refrigerate. Serve with rice (preferable cooked in bulk in a rice cooker or something). Makes 4-5 meals.
